Pad Thai Recipe

It can also be made using shrimp or Tofu

2 cup dried small size rice noodles, soaked in water for half hour)
1 tbl oil
1 garlic (finely chopped)
1/3  cup  tofu (chopped into small pieces) Optional
1/3  cup  chicken stock (or water)
2  eggs (beaten)
1/4  cup  roasted peanuts (chopped)
1/4  cup  Chinese chives (cut into 1 inch pieces)
1/4   cup shredded carrots
1/4  cup  bean sprouts
2 limes (cut into wedges)
Chives and lime wedges for garnish

To make Pad Thai Sauce

2 tbl   palm sugar
2 tbl fish sauce
2 tsp soy sauce
1/4  cup tamarind paste
4 medium shallots finely diced
2 Thai Bird chilies finely diced

Put the oil into a wok and fry the garlic and tofu(optional) until the garlic turns golden brown, Add the rice noodles followed by chicken stock and stir-fry until the noodles are soft (about 2 minutes). Reduce heat and add the sauce ingredients and mix well.

Add the eggs on side of wok or skillet and stir-fry until the egg is cooked, then combine with the noodles. Add the peanuts and chives. Stir-fry to combine and then add the bean sprouts and stir together. Turn off the heat and serve garnished with the lime wedges and chives.
